VIP is special guest that you can take his order and get money up to approx 9500 coins and puzzle. To take his order (by playing games similar to patrons) you need to have the ingredients required. (it is a lot sometimes need 20 of one ingredient)
Patrons are special guests where you can have normal talk, special talk or taking their order. Before that you have to charm them (street fair) to get them to your restaurant.
By doing either one of the action you can grow the level of fondness of your patrons and when you achieve level 5 there is a special rewards for you. Before that every 100 you can have some patron fondness rewards like pasta, puzzle, cash, coins, and costume card.
Some of my reader having difficulty to get the patron at around level 13. That's because you haven't complete the pre requisite quest to get the patron, which are You need oven and Pasta from the oven
The different between the 3 actions are the heart you can get. Normal talk generate 10 heart, special up to 18 (15 with puzzle and coins) , orders is up to 38 heart (35 with puzzle and coins).
However it is up to you, depending on time I do both special talk and taking order. Order is better if you want quick level up the fondness of patrons, but they using quite a lot of ingredients. As long as you can keep up with the money and ingredient order is the best.
Special talk is not bad for when you don't have time, as it is quicker and when you running low on ingredients. Also if you play a lot during day, it seems to me that when you do special talk, they come a bit faster than when you take the order. I still need to confirm on this.
Tips : Charles special talk now finish selling ur dishes too, but no wine
Taking order of the classic artist will speed up ur pasta making by 1 hour

VIP comes aprrox every 6 hours.
Taking order means you have to play mini games, which you can choose between rhythm games or serving games. Both you have to play the memory games first which gives you 30 second to complete.
Tips on memory games
1. Do screenshot/screen capture or screen grab whatever the term is or take photo with other device in 3 second that give you to remember.
If you can, remember 3 or 4 set or any basically the easy one (eg. like the bacon on picture below)
I'm usually not worry about the left ones, as i can open all and left with up to 26 second by doing this.
2. Once you got the screenshot, hit multitasking button. This will pause the game.
( Depending on your device the multi tasking button differ, iphone and ipad is clicking the home button twice, my htc have special button, and so on. )
Alternatively you can hit the x sign on the top right, it would also pause the game
3. While game is pausing refer to the screen capture and remember the position. You can choose to remember the one on the right side only too.
Like the picture above I need squid, clam, chicken, and gorgonzola. You can choose to remember 2 or 3, or as many as you can remember.
I usually go by the pattern as it is easier for me to remember, so i would do squid and chicken as they have same angled pattern.
The more you can remember is better. Depending on the device the pause is different i found out.
My htc pause it better compared to my ipad.
4. Go back to i love pasta and taps the one you remember :) More than 21 second left you get excellent. But my friend says 18 second which good is enough when your rhythm games is excellent.
5. Play the game you have chosen. I like rythm game and i think it is easier.
p.s, Don't worry about bad, you can have up to 3 or 4 bad on your rhythm games and still get excelllent.
If you got to many bad, hit the multitasking button, slide i love pasta up to close the game and do it again.
Added Tips : you can still reload and start over the game even after the final receipt when yougot good only, just dont accept the reward.
Alternatively, when you got a lot of coins, you can always enhance your ability, that way even you got bad, it will be easier to get excellent.
